Notion for sure. I didn't try it with iPad + pen yet but at least I heard it's supported. One thing that I am really missing in Notion: ability to use tags in a way Bear does it - I am just so obsessed managing everything with hashtags.

When I started my business it was all about managing the unknowns to not get lost in doubts. Very often the beginning is hard. Try many, many, many different things. Never stop.
