One of the questions that I really struggle with here is how to to build a defensible product when anyone can replicate the same functionality with just a few API calls. Seems to me like the cutting edge of this field continues to require some expertise in AI/ML/DS.

Yes you can add pre-existing AI tools but there are many more AI tools that don't already exist that should be brought to light...
For example I was working on a ML model that can look at pictures of teeth and recognize the diagnosis code from orthodotics.
There's nothing "off the shelf" that can do this. Someone competent (Data sciencist/AI Engineer) needs to create this model and there's many many others that have yet to see the light of day.
AI engineers and data scientists are instrumental in shaping our technological future, full stack developers remain essential due to their versatile ability to handle all aspects of development, from databases to user interfaces, offering comprehensive solutions to varied business needs.
