I got my first thrilling exposure to Neural Networks in 2002 when I was doing my postgraduate degree in Germany. It was a primitive model built in Matlab, that we trained using data we downloaded from weather stations and other community members working with similar projects in Matlab. Since then, although I knew this was a field that had huge potential, we just never found opportunity to utilize it for paying clients. Nobody was willing to pay for the training period or had sufficient data. Processors also, were not as powerful as they are now, and results would take too long to make things commercially viable. Now though, you can just pick a preferred AI model, and let it teach you how to use it. No external courses needed. Just ask it to tell you how to go about doing stuff.

Before LLMs, there were many go-to resources that were leading the way, I liked Andrew Ng's courses on coursera and deeplearning.ai.. but at the pace of growth nowadays, joining and participating in your favorite GitHub repos is probably the way to go. IMHO, any structured course becomes stale very quickly - apart from basics to just get started.
