SaaS based Business Modeling

As an entrepreneur inspired to build new products to market, I would like to know how important is it for products to be SaaS based and iterative versus traditional way of building. Example: bundling many features into 1 product and enabling to install on premise/custom builds? Thanks for your inputs. This will help us design the next set of products we have in store to be built.
