The biggest challenge for non-technical cofounders is that they are a a dime a dozen and finding technical cofounders to help bring the idea to life is a hard task. The best way to overcome it (at least how I did), is plan out the idea in detail, build up a medium/high-fidelity wireframe to show that you've done work, and show your plan/next steps. To choose the cofounder, go through Y Combinator cofounder match and network with people you know. If you show that you did work, and I mean work not just "here is my idea", and continue to learn the skills on your own time to help with the technical aspect (or understand it more), you will be way more successful in finding a technical cofounder.
