Would you suggest launching on Product Hunt at the end of the month or the first week of the month?

I have seen a lot of posts on the day of the week, is there any data on the time of the month as well?

Well at the start of the month you can be featured in the monthly list for longer but you will also have more competition, while at the end of the month you are unlikely to get featured for the month but have a better chance in the week/day which still generates lots of interest

do you think you have a chance to win product of the month? Do you have a list of people who will support the product? Then beginning of the month is better. If you are just counting on luck and are not sure if the product would gain lots of traction on PH (for example, your target audience is not on PH), then it doesnt matter at all.

Think about introducing the first week of the month for a robust start, or at the end of the month for more exposure among consumers who are actively looking for new products.
