I've been mostly using Cursor when coding.

Is there some that could make good summaries just by listening to me? No meeting notes maker but something that would listen to me all day and I could say that "hey put this to this and that todo list " or "give me short bullet points of all things I did today" - are there some suitable apps for this? I don't want it to store data to any cloud, because I'm working with customer data.
