I see some "Launching Soon" projects with very high engagement, but I can't figure out how they achieve it just by looking at their Product Hunt activity.
I'm really curious about how they do it. Can anyone share their insights?

Can't share their insights, but here is what I plan to do
— reach out to ask potential users to hop on 15m call and roast my landing, giving 3 months sub as thank you
— reach out to try the product and give feedback or testimonial (same terms)
— announce on Li where I have 2K+ followers and X (only 300)

Maybe my opinion will go against your intuition: pitch to people offline, in person.
It's not difficult to pitch to 30 people per day near an office building café. If your target users work there, you just spend one week, and you can get 200 users to spend 5 minutes hearing your idea and trying it out.
But if you find them online or buy some ads, they will only give you a quick glance.
